Chateau des Ducs de Joyeuse
Couiza, Languedoc Roussillon, France.

It took ten years to build this substantial castle, and it looks almost the same today as it would have done on its completion in 1550. Right at the heart of the Cathar castles region, this provides a splendid historical base from which to explore a truly heritage-rich area of France.
There is plenty to occupy the architectural historian here, especially given its construction as a genuine fortress (the place was besieged in 1577 during the Wars of Religion between Protestants and Catholics).
It is, of course, far more peaceful these days, and today the Chateau des Ducs de Joyeuse even offers an outdoor swimming pool. It features 35 guest rooms, a restaurant and a bar.
